BABY BACK RIBS

Ingredients



  • 3 Racks of Baby Back Ribs (unseasoned); I used Chairman's Reserve
  • ½ cup Cup of Mustard
  • 1½ cups of Brown Sugar (1/2 cup per rack)
  • 1½ sticks of unsalted butter (1/2 stick per rack)
  • Killer Hogs Hot BBQ Rub
  • 1 cup of Killer Hogs Vinegar Sauce
  • ½ cup of Killer Hogs BBQ Sauce
  • ½ cup of Apple Cider Vinegar
  • ½ cup of Apple Juice



Instructions


1. Remove the ribs from the Cryovac and place on a large sheet pan or cutting board. 


2. Remove the membrane from the back side of the rack of ribs.


3. Lightly apply mustard all around the ribs.


4. Apply a medium coat of Killer Hogs Hot BBQ Rub all around the ribs.


5. Let the ribs sit aside for about 15 minutes, and turn the Memphis Grill Smoker (or any other smoker of your discretion) and bring the temp up to about 275 degrees.


6. Once the temp reaches 275 degrees, place the ribs horizontally on the grill racks and shut the door to the grill (don’t open it back up until the next step).


7. Create the sauce to brush over the ribs using the Killer Hogs BBQ Sauce, Vinegar, and Hot Rub, set, aside until ready to brush on the ribs. 


8. Open the grill, Spritz and apply the Apple Cider Vinegar and Apple Juice blend over the top and sides of ribs for moisture every 45 minutes or so. 


9. Create a foil wrap using 2 sheets, and adding 1/2 cup of brown sugar, 1/2 stick of padded butter, and a coat of Killer Hogs Vinegar Sauce (can be done right before you pull the ribs off of the grill).


10. After about 2+ hours and the bark is set (spritzing a third and final time), remove the ribs, and place the ribs meat-side down onto the brown sugar, butter, and vinegar,


11. Wrap the ribs tightly.


12. Place ribs back onto the grill meat side up for another hour (this will now be about 3 hours.


13. Pull the ribs from the grill, unwrap, and place the ribs back onto the grill meat side up, and quickly brush on your newly made BBQ sauce over the top of ribs to caramelize. 


14. Close the lid, and smoke for the final 10 minutes.


15. Pull the ribs out of the grill, cut, and enjoy!
