Ingredients



  • 40-50 Chicken Wings
  • 1-2 Liters of Dill Juice (enough to cover the wings) 
  • 1 ½ Cup Buttermilk 
  • ⅓ Cup Killer Hogs Hot Sauce
  • 2 Tbsp Cayenne Pepper
  • 1 1½ Cup of Flour
  • 1 ½ Baking Powder
  • 2 Tbsp Rock or Fine Salt
  • 2 Tbsp Pepper
  • ¼ Cup Butter
  • 1 ½ Cup Frank's Red Hot Sauce
  • ½ Tsp Vinegar
  • Worcestershire Sauce
  • ½ Tsp Sugar



Instructions


  1. Prepare the marinade, put in a bowl 1-2 liters of dill juice (enough to cover the wings), 1 1/2 cup of buttermilk, ⅓ cup Killer Hogs Hot Sauce, and 1-2 teaspoons of cayenne pepper. Stir together all the ingredients then add the chicken wings. Make sure that the wings are well coated. Put it in the refrigerator and marinate it for 6 to 12 hours.
  2. Dredge. In a bowl, add 1 1/2 cups of flour, 1 1/2 of baking powder, 1 tablespoon cayenne, and a pinch of rock salt and pepper. Mix well.
  3. Take the wings out of the marinade and make sure to shake off excess mixture. Place the chicken onto the dredge. Push them down and make sure all parts are coated, shake them, and put them on a separate tray. Repeat the process until all wings are coated.
  4. Heat the grill to 275 degrees and put the wings on the grate for about 45 minutes to an hour. (We are doing this just so we can get some smoke flavor on it. This isn’t to fully cook the chicken wings yet.) We want the internal temperature at 150-155 degrees before pulling them off the grill.
  5. Let’s make homemade buffalo sauce. Heat the pan at medium low, sizzle and melt 1 and 1/2 cups of butter, add 1 1/2 cups of frank's red hot sauce, 1 teaspoon of vinegar, a splash of Worcestershire sauce and a teaspoon of sugar. Stir well for about 10 minutes or until the sauce thickens. 
  6. After 45 minutes of the chicken in the smoker, put them in a fryer for approximately 2 minutes or until crispy. If they float to the top, it’s an indicator that they are done and crispy.
  7. In a separate bowl we are going drizzle our chicken wings with the buffalo sauce and give it a toss to coat all parts of the chicken.
  8. Serve in a plate with your favorite dipping sauce. Enjoy!!!
